I love tasty and beautiful food. I love cooking. I love dishing up. But, as the baby burst into our life, we hardly have time to eat.
Yet, we still remain foodies.
So, we started to practice lazy cooking.
When I was a little girl I lived in Sicily. And as we all know, italians make god of food. That’s why everything they cook is so delicious. The most beautiful thing about italian way of life, is that in spite of how much they adore eating, they don’t spend all of their time at the kitchen.
When our son was born, this lesson I studied in Italy came in handy.
The first recipe we would love to share is as we call it “morning quiche”.
It will take 25 minutes of your precious morning time.
You will need.
– 1/2 pound of cauliflower, 1/2 pound broccoli
– 6 eggs
– 1 cup yogurt
– 1 cup chopped cheese of any kind
– 1/2 cup melted butter
– 1 cup brown rice flour, 1/2 cup sorghum flour
Step 1. Preheat the oven to 350.
Step 2. Mix 1 egg, melted butter, and flour. The dough has to become smooth. Add few spoons of cold water if needed.
Step 3. Cover bottom of 9 inch baking dish. Put it in the oven for 3 minutes.
Step 4. Soak broccoli with boiling water.
Step 5. Mix 5 eggs, yogurt and cheese.
Step 6. Put broccoli and cauliflower in the baking dish. Cover it with egg mixture.
Step 7. Bake for 10-15 minutes.
