Lazy cooking. Lemony pie.
Well, here we go again. One more weekend with family. Precious moments, that you wouldn’t like to spend by the stove, right?
So, that’s where our new recipe comes in handy.
This is a super lemony tart/pie or whatewer you want it to be.
Unbelievably light and unforgettably tasty. Gluten free and healthy!
And, of course, very easy.
You will need.
For the crust:
– 1 cup almond flour
– 1/4 cup butter (or cocnut oil)
– 2 tablespoons sugar
– few drops of vanilla extract
For the filling:
– 3 eggs
– 1 cup sugar
– 2 and a half lemons
– 3 tablespoons organic cornstarch
Heat the oven to 350F
Mix all crust igredients. Batter will look like wet sand.
Put batter on the bottom of 9-inch baking dish. Put it in the oven for 10 min.
Cut lemons and remove the pits. Put lemons in a foodprocessor and blend untill smooth.
Add sugar, eggs and cornstarch to the generic zoloft gluten free food processor. Blend few more minutes.
Pour lemon mixture over the crust into the baking dish.
Bake for 15-20 min. Until ready.
