The time has come! Finally. I’m going to share my Ukrainian heritage.
Ukrainian Fingerpicking cuisine is actually quite greasy and generally not GF.
But, there are certain recipes, that are worth every mom’s attention.
Because they are fast, delicious, healthy and you can totally store the half ready dishes in your freezer.
1. Chicken Kiev
There are only few places in Kiev (the capital of Ukraine) where you can eat the real old school Chicken Kiev. Like literally. This recipe is so forgotten, that only a couple of restaurants cook it well.
- 1 tablespoon chopped green onion
- 1 tablespoon chopped dill
- 1 clove garlic, minced
- 1/2 stick of chilled (frozen) butter
- 1 egg, beaten
- 1/4 cup all-purpose flour
- 1/2 cup fine dry bread crumbs
- 4 chicken breast halves
- Salt and black pepper
- grape seed oil (for frying)
Place the chicken on wooden cutting board flat side up. Cover with plastic wrap and roll with a dough roller. Take the plastic wrap away. Cut butter into 4 pieces. Place a piece of butter in the middle of the chicken piece and cover it with chopped onion, dill and garlic. Fold sides in and roll up.
Mix flout and bread crumbs. Dip the chicken roulettes in egg mixture, then bread crumbs, repeat.
Chill for 2-3 hours.
Fry on high heat for 5 minutes. Place fried rolls on parchment lined baking dish. And bake on 350F for 15 minutes.
Once you cut your first piece, you’ll see what this all buzz was about.
