Many of us have never heard about Jerusalem Artichokes.
Really, what are those strange looking root veggies? In Ukraine we used to call them root pear. Because of the texture. But the taste is less sweet, a bit tangy and nutty. It’s also very juicy, so you can add it to your morning smoothie as well. Works especially good with ginger and lemon combination!
Apart from great taste it incredibly good for your health. It’s obviously high in fiber and antioxidants. Add some electrolytes and the highest amount of iron among other root veggies.

Good question! Usually, your next door grocery shops don’t carry Jerusalem Artichokes. You’ll have to check local farmer’s markets. We got ours at OurHarvest.
How to eat?
There are hundreds of recipes in the web. Soups, salads, stews… We prefer to eat it in the raw state.
