Kids all around the world love simple food. But simple doesn’t have to mean boring. You still can mix flavors, add spices and be creative.

You can add any veggies or greens of your choice. For example I add chopped spinach and dried tomatoes. And yes, kids eat that!
– 4 eggs
– 1/4 cup milk (rise milk, soy milk, any milk)
– 1 sliced tomato
– 1 sliced baby eggplant
– salt and pepper
– cast iron skillet
– 4 tablespoons of avocado oil
Heat the skillet. Pour 2 tablespoons of oil and brown the eggplant. Beat eggs, milk, salt and pepper. Add oil. Pour mixture on top of eggplant and add tomato. Cook covered with lid on medium heat for 5 minutes.

This one is my favorite. Because you can add literally everything! Main ingredients are plain yogurt, crunchy granola and honey. Though, you can substitute honey with maple syrup or agave.
For 2 servings you will need:
– 2 cups of any fruits and berries of your choice
– 2 cups of yogurt
– 2 tea spoons of sweetener
– 1 cup of crunchy granola
Here is how you make it. Put 1 cup of whole grain old fashioned rolled oats and 2 table spoons of coconut oil on the baking pan. Preheat the oven to 350 F. Cook until golden and crunchy (5-1o min).
Mix yogurt with sweetener. Put first layer of granola, than yogurt, fruits and yogurt again. You can make as much layers as you want!
