15 minutes Gluten free banana muffins

As you already know I’m a great lover of lazy cooking. Well.

I’m a great lover of everything lazy.

Today I’m going to share a new recipe.

I’ve tried a lot of banana muffins recipes from the web. But there is allways something wrong with them. Too complicated, too many ingredients, too sneaky ingredients (like xanthan gum). I know it’s proved to be kind of harmless, but I just hate putting something called GUM into my pastry. It doesn’t even sound yummy.

So, after trying approximately 20 recipes of banana something, I’ve made my own.

Which is as always super easy, fast and includes 6 ingredients.

You will need:

– 1,5 banana

– 3 eggs

– 1 cup rice flour

– ½ teaspoon baking soda

– 1 tb spoon lemon juice

– 1/3 cup coconut oil (butter)

Heat the oven to 350F

Step 1. Blend bananas with eggs and cocnut butter till smooth

Step 2. Mix baking soda and lemon juice in the spoon. Add it to banana and eggs mixture. Add flour.

Step 3. Mix.

Step 4. Grease mini muffin baking dish and pour batter.

Step 5. Bake 10 min.
